Thats not to say the meal wouldn't be fantastic (I'm sure it is), but why would you spend that much for one meal? For six dollars I can go buy a book that can change my perspective on the world and still go back for seconds, thirds, and fourths years later at no extra charge. Albeit more expensive, the same could be same for certain movies and escapist games. This spud? $60 for a single, one time experience. Then $60 for seconds, $60 for thirds, etc. It also doesn't help that most (Read: Most) of the ingredients probably cost $10 a plate. A standing ovation? Its a money sink.
